2 cups vegetable broth
1 can black beans, drained and rinsed
1 cup corn, frozen or fresh
1 red bell pepper, diced
1 avocado, diced
1 lime, juiced
1 tsp cumin
Salt and pepper to taste

Instructions
Rinse the quinoa under cold water.
In a saucepan, combine quinoa and vegetable broth; bring to a boil.
Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.
