  • 1 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped spinach
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a mixing bowl, whisk together the eggs, cottage cheese, salt, and pepper until well combined.
  2. Stir in the shredded cheese, bell peppers, and spinach.
  3. Pour the mixture into silicone molds, filling them about 3/4 full.
  4. Preheat the air fryer to 270°F (130°C).
  5. Place the molds in the air fryer basket and cook for 15-18 minutes, or until the egg bites are set.
  6. Carefully remove the molds from the air fryer and let cool for a few minutes before removing the egg bites.
  7. Serve warm and enjoy!
