  • ½ cup unsweetened black cocoa powder

  • 1 cup buttermilk
  • ½ cup vegetable oil

  • 1 tsp vanilla extract
  • 1 cup raspberry or cherry jam (for filling)
  • Buttercream frosting (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together the flour, sugar, black cocoa powder, baking soda, and salt.
  3. In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  5. Fill each cupcake liner about 2/3 full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Let the cupcakes cool completely before filling.
  8. Using a piping bag, fill each cupcake with raspberry or cherry jam from the center.
  9. Top with buttercream frosting and decorate as desired.
