- 1/2 cup almond flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tbsp matcha powder
- 1/2 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup fresh blueberries
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the all-purpose flour, almond flour, sugar, baking powder, baking soda, salt, and matcha powder.
- In another bowl, mix the applesauce, vegetable oil, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the fresh blueberries.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
