  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons vegan butter
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tablespoons tomato paste
  • 1 tablespoon garam masala
  • 1 teaspoon turmeric powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet, melt the vegan butter over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the garlic and ginger, cooking for another minute.
  4. Add the cauliflower florets and cook for about 5 minutes, stirring occasionally.
  5. Pour in the coconut milk and add the tomato paste, garam masala, turmeric, and salt.
  6. Bring to a simmer and cover, cooking for 15-20 minutes until the cauliflower is tender.
  7. Remove the lid and let it cook for an additional 5 minutes to thicken the sauce.
  8. Garnish with fresh cilantro before serving.
