  • 1 cup grated zucchini
  • 1 cup grated apple
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the grated carrots, zucchini, and apple.
  3. In another bowl, whisk together the eggs, sugar, oil, and vanilla extract.
  4. Combine the wet ingredients with the grated mixture.
  5. In a separate bowl, mix the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  6. Gradually add the dry ingredients to the wet mixture until just combined.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  9. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
