  • 2 cups cooked pasta or rice
  • 1 cup shredded cheese
  • 1 can (15 oz) diced tomatoes
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the olive oil, chopped vegetables, cooked protein, cooked pasta or rice, diced tomatoes, Italian seasoning, salt, and pepper.
  3. Mix well until all ingredients are evenly coated.
  4. Transfer the mixture to the nonstick casserole dish and spread it out evenly.
  5. Top with shredded cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
