Deliciously soft and buttery cherry almond scones that are perfect for breakfast or a sweet treat.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup chopped fresh cherries
  • 1/4 cup sliced almonds
  • 1/2 cup heavy cream
  • 1 teaspoon almond extract

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the cold butter and mix until the mixture resembles coarse crumbs.
  4. Gently fold in the cherries and almonds.
  5. In a separate bowl, combine the heavy cream and almond extract.
  6. Pour the cream mixture into the dry ingredients and stir until just combined.
  7. Turn the dough onto a floured surface and knead gently until it comes together.
  8. Pat the dough into a circle about 1 inch thick and cut into wedges.
  9. Place the scones on the prepared baking sheet and bake for 15-20 minutes or until golden brown.
  10. Let cool slightly before serving.

Notes

  • For a sweeter scone, add more sugar to the dough.
  • These scones are best served fresh but can be stored in an airtight container for up to 2 days.
  • Feel free to substitute dried cherries if fresh ones are not available.
