- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup orzo pasta
- 4 cups chicken broth
- 1 cup diced tomatoes
- 1/2 cup chopped fresh basil
- Olive oil for cooking
- In a bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into meatballs.
- Heat olive oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides.
- Remove meatballs from the skillet and set aside.
- In the same skillet, add chicken broth and bring to a boil. Stir in orzo and cook according to package instructions.
- Add diced tomatoes and meatballs back to the skillet. Simmer for 10 minutes until meatballs are cooked through.
- Stir in fresh basil before serving.
