A delicious and hearty dish featuring tender chicken meatballs served with orzo pasta in a flavorful sauce.

Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup diced tomatoes
  • 1/2 cup chopped fresh basil
  • Olive oil for cooking

Instructions

  1. In a bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix well and form into meatballs.
  2. Heat olive oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides.
  3. Remove meatballs from the skillet and set aside.
  4. In the same skillet, add chicken broth and bring to a boil. Stir in orzo and cook according to package instructions.
  5. Add diced tomatoes and meatballs back to the skillet. Simmer for 10 minutes until meatballs are cooked through.
  6. Stir in fresh basil before serving.

Notes

  • For added flavor, you can sauté onions and bell peppers before adding the broth.
  • Feel free to substitute ground turkey for a leaner option.
  • This dish can be made ahead of time and reheated for a quick meal.
