A delicious and easy-to-make Cookies & Cream Earthquake Cake that combines rich chocolate cake with creamy layers of cookies and cream.

Ingredients

  • 1 box chocolate cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup crushed Oreo cookies
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup chocolate chips
  • 1/2 cup crushed Oreo cookies for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine the chocolate cake mix, water, vegetable oil, and eggs. Mix until well combined.
  3. Pour half of the cake batter into the prepared baking pan.
  4. In another bowl, beat the softened cream cheese and powdered sugar until smooth. Stir in the crushed Oreo cookies and chocolate chips.
  5. Drop spoonfuls of the cream cheese mixture over the cake batter in the pan.
  6. Pour the remaining cake batter over the cream cheese mixture.
  7. Sprinkle the top with additional crushed Oreo cookies.
  8. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before serving.

Notes

  • For a richer flavor, use dark chocolate cake mix.
  • Serve with whipped cream or ice cream for an extra treat.
  • Store leftovers in an airtight container in the refrigerator.
