  • 2 cups cottage cheese
  • 2 medium sweet potatoes, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss the diced sweet potatoes with olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes, or until tender and slightly caramelized.
  4. In meal prep containers, layer the cottage cheese, roasted sweet potatoes, black beans, corn, and avocado.
  5. Top with fresh cilantro and a squeeze of lime juice before serving.
