  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add minced garlic and sliced mushrooms, sauté until mushrooms are tender.
  3. Stir in the orzo and cook for 1-2 minutes.
  4. Add vegetable broth and bring to a boil.
  5. Reduce heat and simmer until orzo is cooked, about 10 minutes.
  6. Stir in fresh spinach and heavy cream, cooking until spinach is wilted.
  7. Mix in grated Parmesan cheese and season with salt and pepper.
