  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 sheets nori (seaweed)
  • 1/2 pound shrimp tempura
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • 1/4 cup crunchy tempura flakes
  • Soy sauce, for serving
  • Wasabi, for serving
  • Pickled ginger, for serving

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Cook the sushi rice according to package instructions.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
  4. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture.
  5. Let the rice cool to room temperature.
  6. Place a sheet of nori on a bamboo sushi mat.
  7. Spread a thin layer of sushi rice over the nori, leaving a small border at the top.
  8. Arrange shrimp tempura, avocado, and cucumber in a line across the rice.
  9. Using the mat, roll the sushi tightly away from you, pressing gently to form a roll.
  10. Seal the edge of the nori with a little water.
  11. Sprinkle tempura flakes on top of the roll for added crunch.
  12. Slice the roll into bite-sized pieces and serve with soy sauce, wasabi, and pickled ginger.

  • For a vegetarian option, substitute shrimp tempura with fried tofu.
