A simple and delicious recipe for creamy chicken cooked in coconut milk using a crockpot.

  • 4 boneless, skinless chicken breasts
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon curry powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Place the chicken breasts in the crockpot.
  2. In a bowl, mix together the coconut milk, chicken broth, onion, garlic, ginger, soy sauce, curry powder, salt, and pepper.
  3. Pour the mixture over the chicken in the crockpot.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken with two forks and stir it back into the sauce.
  6. Serve hot, garnished with fresh cilantro.
