A simple and delicious crock pot pot roast recipe that results in tender meat and rich gravy.

Ingredients

  • 34 lbs chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the chuck roast with salt and pepper, then sear it in the skillet until browned on all sides.
  3. Transfer the roast to the crock pot.
  4. Add chopped onion, minced garlic, sliced carrots, and diced potatoes around the roast.
  5. In a bowl, mix beef broth, Worcestershire sauce, and dried thyme, then pour over the roast and vegetables.
  6. Cover and cook on low for 8 hours or high for 4 hours, until the meat is tender.
  7. Remove the roast and vegetables, and strain the liquid to make gravy.
  8. Serve the pot roast with gravy over the top.
