  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Avocado slices for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, bell pepper, and garlic; sauté until softened.
  2. Add the chicken breasts to the pot and pour in the chicken broth.
  3. Stir in the black beans, corn, diced tomatoes, and taco seasoning.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for 20-25 minutes.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro and avocado slices.
