Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a bowl, sift together almond flour and powdered sugar.
  3. In a separate bowl, beat egg whites until foamy, then add cream of tartar and gradually add granulated sugar until stiff peaks form.
  4. Fold the dry ingredients into the egg whites gently until the mixture flows like lava.
  5. If using, add food coloring and mix until evenly distributed.
  6. Pipe small circles onto the prepared baking sheets and let them sit for 30-60 minutes to form a skin.
  7. Bake for 15-20 minutes, then let cool completely before filling.
  8. Sandwich two shells together with your chosen filling.
