Ingredients

Scale
  • 1 (5-7 lb) prime rib roast
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. In a bowl, mix together minced garlic, rosemary, thyme, olive oil, salt, pepper, and Dijon mustard to form a paste.
  3. Rub the garlic herb mixture all over the prime rib roast.
  4. Place the roast on a rack in a roasting pan, bone side down.
  5. Roast in the preheated oven for 20 minutes, then reduce the temperature to 325°F (163°C).
  6. Continue roasting until the internal temperature reaches your desired doneness (about 130°F for medium-rare).
  7. Remove from the oven and let it rest for at least 20 minutes before slicing.

Notes

  • Use a meat thermometer for accurate doneness.
  • Letting the roast rest is crucial for juicy meat.
  • Pair with your favorite sides for a complete meal.
