A classic German dish made with potatoes, bacon, and a tangy vinegar dressing, perfect for any occasion.

  • 2 pounds of potatoes
  • 4 slices of bacon
  • 1/2 cup of onion, chopped
  • 1/4 cup of apple cider vinegar
  • 1 tablespoon of sugar
  • 1/4 cup of vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil the potatoes in salted water until tender, then drain and let cool.
  2. While the potatoes are cooling, cook the bacon in a skillet until crispy. Remove and crumble the bacon, reserving the drippings.
  3. Add the chopped onion to the skillet and sauté until translucent.
  4. In a bowl, mix the apple cider vinegar, sugar, vegetable broth, and reserved bacon drippings.
  5. Once the potatoes are cool, slice them and add to the skillet with the onions and bacon.
  6. Pour the vinegar mixture over the potatoes and gently toss to combine.
  7. Season with salt and pepper to taste, and garnish with fresh parsley before serving.

  • For a vegetarian version, omit the bacon and use olive oil instead of bacon drippings.
