  • 1 lb baby octopus
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 clove garlic, minced
  • 1 red chili, sliced
  • Fresh herbs for garnish (cilantro, mint)

Instructions

  1. Clean the baby octopus and remove the beak and ink sac.
  2. In a bowl, mix olive oil, salt, black pepper, lime juice, fish sauce, sugar, and minced garlic.
  3. Add the baby octopus to the marinade and let it sit for at least 30 minutes.
  4. Preheat the grill to medium-high heat.
  5. Grill the octopus for about 3-4 minutes on each side until charred and cooked through.
  6. In a small bowl, combine fish sauce, lime juice, sugar, and sliced chili to make the Nuoc Cham dipping sauce.
  7. Serve the grilled octopus garnished with fresh herbs and the Nuoc Cham on the side.
