A healthy and delicious casserole made with ground turkey and zucchini, perfect for a family meal.

  • 1 lb ground turkey
  • 2 medium zucchinis, sliced
  • 1 cup diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and sauté onions and garlic until translucent.
  3. Add ground turkey to the skillet and cook until browned.
  4. Stir in sliced zucchini, diced tomatoes, Italian seasoning, salt, and pepper. Cook for an additional 5 minutes.
  5. Transfer the mixture to a baking dish and top with shredded mozzarella cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving.
