  • 6 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cooked bacon, crumbled
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Place the diced potatoes, chopped onion, garlic, and chicken broth in the crockpot.
  2. Season with salt, pepper, and thyme.
  3. Cook on low for 6-8 hours or high for 3-4 hours until the potatoes are tender.
  4. Once cooked, use a potato masher to mash some of the potatoes for a creamy texture.
  5. Stir in the heavy cream and crumbled bacon.
  6. Cook for an additional 30 minutes on low.
  7. Serve hot, topped with shredded cheddar cheese if desired.

Notes

  • For a vegetarian version, omit the bacon and use vegetable broth.
  • Adjust the thickness of the soup by adding more or less cream.
