Hobo Casserole is a nostalgic one-dish dinner that combines ground beef, vegetables, and potatoes for a hearty meal.

Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) green beans, drained
  • 1 can (15 oz) corn, drained
  • 4 medium potatoes, sliced
  • 1 onion, chopped
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat.
  3. Add the chopped onion and cook until translucent.
  4. In a large baking dish, layer the sliced potatoes, followed by the cooked beef and onion mixture.
  5. Add the drained green beans and corn on top.
  6. Spread the cream of mushroom soup over the vegetables.
  7. Season with salt and pepper to taste.
  8. Cover with aluminum foil and bake for 1 hour.
  9. Remove the foil, sprinkle cheddar cheese on top, and bake for an additional 15 minutes until the cheese is melted and bubbly.
