  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, brown the ground beef over medium heat until fully cooked.
  2. Add the black beans, corn, diced tomatoes, taco seasoning, and chicken broth to the pot.
  3. Bring the mixture to a boil, then reduce heat and let it simmer for 15 minutes.
  4. Stir in the heavy cream and cheese, cooking until the cheese is melted and the soup is creamy.
  5. Season with salt and pepper to taste.
