Italian Drunken Noodles is a delicious fusion dish that combines the bold flavors of Italian cuisine with the traditional elements of Thai drunken noodles.

  • 8 oz rice noodles
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil, chopped
  • 1/4 cup Parmesan cheese, grated
  • 2 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Add sliced bell pepper and zucchini, cooking until tender.
  5. Stir in cherry tomatoes and cook until they start to soften.
  6. Add the cooked noodles to the skillet, along with soy sauce and balsamic vinegar.
  7. Toss everything together until well combined and heated through.
  8. Remove from heat and stir in fresh basil and Parmesan cheese.
  9. Serve hot, garnished with additional basil and red pepper flakes if desired.
