2 boneless, skinless chicken breasts
8 oz pasta (penne or fettuccine)
1 cup heavy cream
1 cup chicken broth
1 cup sun-dried tomatoes, chopped
1 cup spinach, fresh
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1 tsp Italian seasoning
Salt and pepper to taste
Olive oil for cooking
Instructions
Cook the pasta according to package instructions; drain and set aside.
In a large skillet, heat olive oil over medium heat and add the chicken breasts. Season with salt and pepper, and cook until golden brown and cooked through, about 6-7 minutes per side.
Remove the chicken from the skillet and set aside. In the same skillet, add garlic and sauté for 1 minute.
Add the sun-dried tomatoes, chicken broth, and heavy cream. Stir to combine and bring to a simmer.
Add the spinach and cook until wilted, about 2 minutes.
Stir in the Parmesan cheese and Italian seasoning, then return the chicken to the skillet.
Add the cooked pasta and toss everything together until well combined.
Serve hot, garnished with additional Parmesan if desired.
