  • 4 large eggs
  • 1 medium zucchini, grated
  • 1 bell pepper, diced
  • 1 small onion, chopped
  • 1 cup spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the onion and bell pepper, sautéing until softened.
  4. Stir in the grated zucchini and spinach, cooking until the spinach wilts.
  5. In a bowl, whisk together the eggs, milk, salt, and pepper.
  6. Pour the egg mixture over the sautéed vegetables in the skillet.
  7. Sprinkle feta cheese on top.
  8. Cook on the stovetop for 2-3 minutes until the edges start to set.
  9. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and golden.
  10. Let it cool slightly before slicing and serving.
