A delicious and easy one-pan meal featuring balsamic chicken and roasted vegetables, perfect for a weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 cups mixed vegetables (bell peppers, zucchini, carrots)
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix balsamic vinegar, olive oil, garlic powder, onion powder, salt, and pepper.
  3. Place chicken breasts in a baking dish and pour the balsamic mixture over them.
  4. Add the mixed vegetables around the chicken in the baking dish.
  5. Toss the vegetables in the balsamic mixture to coat.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the vegetables are tender.
  7. Garnish with fresh basil before serving.
