A delicious and easy one-pot creamy Tuscan chicken pasta that combines tender chicken, sun-dried tomatoes, and spinach in a rich and creamy sauce.

  • 8 oz penne pasta
  • 1 lb chicken breast, diced
  • 2 cups spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat and add the diced chicken. Cook until browned and cooked through.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the sun-dried tomatoes and Italian seasoning.
  4. Add the chicken broth and bring to a simmer.
