A creamy and flavorful mac and cheese dish combining the sweetness of pumpkin and apple with three types of cheese.

  • 8 oz elbow macaroni
  • 1 cup pumpkin puree
  • 1 cup apple sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups milk
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni according to package instructions; drain and set aside.
  2. In a saucepan, melt the butter over medium heat.
  3. Stir in the flour, garlic powder, onion powder, salt, and pepper to create a roux.
  4. Gradually whisk in the milk, cooking until the mixture thickens.
  5. Add the pumpkin puree and apple sauce, mixing well.
  6. Stir in the cheddar, mozzarella, and Parmesan cheeses until melted and smooth.
  7. Combine the cheese sauce with the cooked macaroni, mixing until well coated.
  8. Transfer to a baking dish and bake at 350°F (175°C) for 20-25 minutes until bubbly.

Notes

  • For a spicier kick, add a pinch of cayenne pepper.
  • Can be topped with breadcrumbs for added crunch.
