A quick and easy teriyaki chicken stir-fry packed with colorful veggies, perfect for a weeknight dinner.

  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1/4 cup teriyaki sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Cooked rice or noodles for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add minced garlic and grated ginger, sauté for 1 minute.
  3. Add sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.
  4. Add mixed vegetables and stir-fry for another 3-4 minutes until tender-crisp.
