  • 2 cups black beans, soaked overnight
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Drain and rinse the soaked black beans.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion and garlic, sauté until softened.
  4. Stir in the bell pepper, cumin, and chili powder, cooking for another 2 minutes.
  5. Add the black beans, vegetable broth, and diced tomatoes to the pot.
  6. Bring to a boil, then reduce heat and simmer for 30-40 minutes until beans are tender.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh cilantro.
