  • 1 lb Andouille sausage, sliced
  • 1 lb chicken breast, diced
  • 1 cup bell peppers, chopped
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 2 cups long-grain rice
  • 2 tsp Cajun seasoning
  • 1 tsp thyme
  • Salt and pepper to taste
  • Green onions, for garnish

Instructions

  1. In the slow cooker, combine the sausage, chicken, bell peppers, onion, and garlic.
  2. Add the diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, salt, and pepper.
  3. Stir well to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Once cooked, fluff the rice with a fork and garnish with green onions before serving.

Notes

  • For a spicier version, add cayenne pepper to taste.
  • Feel free to substitute shrimp for chicken for a seafood jambalaya.
