- 1 lb Andouille sausage, sliced
- 1 lb chicken breast, diced
- 1 cup bell peppers, chopped
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 2 cups long-grain rice
- 2 tsp Cajun seasoning
- 1 tsp thyme
- Salt and pepper to taste
- Green onions, for garnish
- In the slow cooker, combine the sausage, chicken, bell peppers, onion, and garlic.
- Add the diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, salt, and pepper.
- Stir well to combine all ingredients.
