  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 carrots, chopped
  • 4 potatoes, chopped
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the beef chuck roast with salt and pepper, then sear it in the skillet until browned on all sides.
  3. Transfer the roast to the slow cooker.
  4. Add chopped onion, garlic, carrots, and potatoes around the roast.
  5. Pour beef broth and Worcestershire sauce over the ingredients.
  6. Sprinkle thyme and rosemary on top.
