Strawberry Earthquake Cake Bars are a delightful dessert that combines the flavors of strawberries and cream cheese in a moist cake, perfect for potlucks and parties.

  • 1 box strawberry cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 cup fresh strawberries, chopped
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup shredded coconut
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, combine the strawberry cake mix, water, vegetable oil, and eggs. Mix until well combined.
  3. Fold in the chopped strawberries gently into the batter.
  4. Pour half of the batter into the prepared baking pan.
  5. In a separate bowl, beat the cream cheese and powdered sugar until smooth. Drop spoonfuls of the cream cheese mixture over the batter.
  6. Pour the remaining batter over the cream cheese layer and spread evenly.
  7. Sprinkle shredded coconut and chopped nuts on top, if using.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before cutting into bars and serving.

Notes

  • For a richer flavor, use fresh strawberries instead of frozen.
  • These bars can be stored in the refrigerator for up to 5 days.
  • Feel free to add chocolate chips for an extra treat!
