  • 1 cup warm water
  • 2 tablespoons olive oil
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 teaspoon salt
  • 1 cup sundried tomatoes, chopped
  • 1 cup feta cheese, crumbled
  • 1 tablespoon sugar

Instructions

  1. In a bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt.
  3. Add the yeast mixture and olive oil to the flour mixture. Stir until a dough forms.
  4. Fold in sundried tomatoes and feta cheese.
  5. Knead the dough on a floured surface for about 10 minutes until smooth.
  6. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.
  7. Punch down the dough and shape it into a loaf.
  8. Place the loaf in a greased loaf pan and let it rise for another 30 minutes.
  9. Preheat the oven to 375°F (190°C).
  10. Bake the bread for 30-35 minutes or until golden brown and sounds hollow when tapped.
  11. Let it cool before slicing.

Notes

  • For a more intense flavor, use sun-dried tomatoes packed in oil.
  • This bread can be served warm or at room temperature.
  • Store leftovers in an airtight container for up to 3 days.
