4 boneless, skinless chicken breasts
1 cup fresh spinach, chopped
1/2 cup sun-dried tomatoes, chopped
1 cup mozzarella cheese, shredded
1/4 cup cream cheese, softened
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
2 tablespoons olive oil
Instructions
Preheat the oven to 375°F (190°C).
In a bowl, mix together spinach, sun-dried tomatoes, mozzarella cheese, cream cheese, garlic, Italian seasoning, salt, and pepper.
Cut a pocket in each chicken breast and stuff with the mixture.
Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
