  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together spinach, sun-dried tomatoes, mozzarella cheese, cream cheese, garlic, Italian seasoning, salt, and pepper.
  3. Cut a pocket in each chicken breast and stuff with the mixture.
  4. Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  6. Let rest for a few minutes before serving.
