- 2 cups of cooked quinoa
- 1 can of black beans, drained and rinsed
- 1 cup of corn, frozen or canned
- 1 cup of diced tomatoes
- 1 cup of shredded cheese (optional)
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, and spices.
- Transfer the mixture to a greased baking dish.
- If using, sprinkle shredded cheese on top.
- Bake for 25-30 minutes or until heated through and cheese is melted.
- Let it cool for a few minutes before serving.
