A collection of easy and flavorful vegetarian dump and bake casseroles that require minimal preparation and cooking time.

Ingredients

  • 2 cups of cooked quinoa
  • 1 can of black beans, drained and rinsed
  • 1 cup of corn, frozen or canned
  • 1 cup of diced tomatoes
  • 1 cup of shredded cheese (optional)
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, and spices.
  3. Transfer the mixture to a greased baking dish.
  4. If using, sprinkle shredded cheese on top.
  5. Bake for 25-30 minutes or until heated through and cheese is melted.
  6. Let it cool for a few minutes before serving.

Notes

  • Feel free to add any other vegetables you have on hand.
  • This dish can be made ahead of time and stored in the refrigerator.
  • For a spicier version, add jalapeños or hot sauce.
